Steph’s ‘Eggcellent’ Recipes

This collection of recipes will remind you on just how versatile the humble egg is!

Whether you’re looking for breakfast, lunch, snack or dinner inspiration, here you’ll find delicious ways to cook and use your eggs no matter how you like to enjoy them.

From poached to fried to featuring in a healthy frittata or creamy carbonara, we’ve got you covered.

Eggs are such an easy, delicious and affordable way to both support your daily protein intake and keep everyone around the table satisfied.

The best thing about eggs is how they can work for any time of the day.

In all honesty, eggs your way on toast can work for breakfast, lunch and/or dinner! However with that said, eggs can be cooked in so many more and delicious ways and I’m excited to share with you my favourite ‘eggcellent’ recipes.

1. Pesto Eggs

I love a good fried egg from time to time and the nutty and herby flavours from the pesto take these eggs to the next level. Whether you’ve chosen to make or buy your pesto (there’s no right or wrong), with just 4 simple ingredients – pesto, eggs, sourdough bread and baby spinach – this recipe is sure to leave your tastebuds tingling.

2. Smashed Avocado on Toast

Bring brunch home with this simple, yum and easy recipe. Featuring avo, 2 poached eggs, goats cheese and more, I don’t think you need much more convincing to whip this up…

PLUS for those living in Australia, avocado prices are still low making them a budget friendly veggie!

3. Banana Pancakes

These pancakes are one of the easiest ways I keep both my toddler and husband happy on the weekend. They need only 6 ingredients, including blended oats (a slow release carbohydrate), to ensure we are feeling satisfied and fuelled for day’s worth of activities.

4. Halloumi, Roasted Pumpkin and Spinach Frittata

My sister in law could not stop raving about how much she loves this recipe, so much so that I decided to give it a crack (mind the pun!) and boy was there merit behind her recommendation. The saltiness from the halloumi paired with the sweetness of the pumpkin was so delicious and the spinach gave it some more texture.

This is a great recipe for those who are looking to meal prep a lunch which doesn’t necessarily require reheating.

You might even choose to serve it with a side salad and my personal favourite accompaniment, some tomato relish.

5. Egg and Spinach Wrap

This simple wrap could work for both breakfast or lunch! Using only 6 simple ingredients, you’ve got yourself a delicious meal. However if you’re not too keen on a wrap, assemble the same ingredients between 2 slices of your favourite bread or even a bagel!

Better yet, it’s a seriously easy one to bring the ingredients and assemble in the office – all you need to ensure it that your eggs are already hard boiled.

6. Super Sausage Rolls

Whether I’m entertaining, want to make something yummy and fun that reminds me of my childhood or need to use the mince sitting in my fridge, this is one my go to recipes. What I especially love is that once they’ve been cut, they can be frozen and baked at any time! The egg in this recipe is used as a combining agent to help the the mince mixture form.

7. Classic Carbonara

Let’s be real, who can pass up a bowl of carbonara? I certainly can’t. I love how deliciously creamy but light this recipe is. Remember that the key to nailing a carbonara is to remove the pan from the heat before adding the egg and cheese mixture. If you don’t do this, the eggs will start to cook and you’ll essentially end up with scrambled egg through your dish. Be patient and let the residual heat from the pasta and pan gently create that creamy sauce.

8. Choc Banana Muffins

I love to get my bake on and these ALWAYS go down a treat. The recipe is SO simple with just 9 ingredients. You could even get the kids to make them with you.

Whether I’m taking them to the office to share with my team or am heading out for a picnic with friends, or want to freeze them for later on, these bad boys tick all the boxes. I know you’re going to love how fluffy, moist, and delicious they are (plus they put my overripe bananas and eggs to good use).
