NOA’S CHEESY CHICKEN QUESADILLAS.

You asked we listened! Say ‘hello’ to our brand new chicken quesadilla recipe in partnership with @noashealthyeats. 

SAVE THIS RECIPE 👇 
Serves 4 | Under 30 mins 

1½ tbs olive oil
400g chicken breast
1x small brown onion
1x garlic clove
1x small red capsicum
1x tsp cumin
1x tsp paprika
½ tsp garlic powder
1½ tsp onion powder
4x large tortillas
4x spring onions.
20g fresh coriander leaves.
80g low fat mozzarella
1x avocado
2x tbs light sour cream
1/4 tsp garlic powder
2x tbs Lemon juice
1/3 tsp Salt
1/4 tsp pepper

1. Prepare your Guacamole dip by mashing together the avocado, light sour cream, 5g of finely chopped coriander, half of the garlic powder and lemon juice.  Season with salt and pepper.
2. Prepare the quesadilla filling, add diced chicken to a bowl and coat with 1 tbs of olive oil , sprinkle over the cumin, paprika, half of the garlic powder, onion powder, salt & pepper. Mix and set aside.

3. Mince your garlic, dice the onion and capsicum, finely slice the spring onion and roughly chop the coriander and set aside. 4. In a large pan or skillet over med-high heat add the remaining ½ tbs of olive oil. Cook your onion & garlic for 1 minute until slightly softened, then add capsicum and cook for another 2 minutes. Transfer to a clean bowl.
5. Add your chicken mix to the same pan you cooked your onion & capsicum. Cook for approx. 3 mins each side (6 mins total) or until golden and cooked through. Then mix into the same bowl as your onion and capsicum. Set aside.

6. To assemble your quesadillas, divide chicken and veggie mix, cheese, spring onion and remaining coriander between the tortillas. Only place the fillings on one half so that you're able to fold the tortilla in half. Once filled, fold in half and return your filled tortillas to the same pan on medium heat, cook for approx. 1.5 mins on each side (cover with a lid) to lightly toast and melt your cheese. Then transfer to a chopping board and cut into quarters or thirds. Serve immediately with the guacamole dip.

Liv’s tips to stop yourself from body checking. ✋

To put it simply, ‘body checking’ is a way we remind ourselves of our so called ‘imperfections’. The more someone body checks, the more negative food and exercise behaviours we develop. 

Here at KIC, we’re all about developing a sustainable healthy relationship with food and exercise.  If you’re someone who regularly finds themselves checking their body, wether it be weighing yourself, checking yourself out in mirrors, grabbing your stomach, or comparing your body to others, then we encourage you to try the below challenge. 

CHALLENGE 
👉 Tally up every time you body check for 1 day in the notes of your phone. Then, try to minimise the things that come up for you most often e.g a bedroom mirror - cover it up or turn it backwards. 

👉 Tally your body checks again after trying to reduce your triggers & see if there’s an improvement.

NOA’S CHEESY CHICKEN QUESADILLAS.

You asked we listened! Say ‘hello’ to our brand new chicken quesadilla recipe in partnership with @noashealthyeats. 

SAVE THIS RECIPE 👇 
Serves 4 | Under 30 mins 

1½ tbs olive oil
