In some way, shape or form, we’re all feeling the effects from the rising cost of living. From the cost of groceries to the cost of petrol, rising prices are forcing us to rethink our spending and tighten up our budgets.

One easy way to combat the rising cost of living is by meal prepping and cooking budget friendly recipes.

When it comes to meal prepping and cooking budget friendly recipes, don’t think that you’ll be eating foods that are bland or unexciting – you’ll be surprised at what you can whip up while you save!

To help inspire you and showcase how many yummy things you can meal prep and enjoy within a budget, we asked our team to share their favourite meal prep recipe and or budget friendly recipe. From breakfasts, to lunches and dinners, our team have shared some seriously yummy, nourishing and EASY recipes.

BREAKFAST

There are only 6 ingredients needed to make the Apple Pie Porridge. I love this recipe not only for the flavour combo but because oats are always super affordable, filling and great for energy! You really can’t go wrong when you opt for oats in the morning.

I always have my breakfast at work and the PB & Choc Overnight Oats has been my recent go to. What I love is that I can make a big batch at the beginning of the week and leave it in the fridge at the office so that I’m ready to go for the rest of the week. I love the protein powder addition – the flavour tastes like I’m eating cake for breakfast! But what’s great about this recipe is that it tastes just as good without the protein powder too, you could just add a touch of vanilla essence instead.

Harvey, Josh and I all love the Banana Pancakes. I’ll make these on a morning I’m not rushing off to the office and they always go down a treat! They use staple pantry ingredients and can be topped with your favourite fruits or even frozen berries which are a little kinder to the budget

LUNCH

I love tuna and the Tuna and Rice Bowl is a super simple way for me to get a balanced meal in during my day. Canned tuna is a super affordable source of protein and if you wanted to be even savvier, instead of opting for a rice pot, you could grab a packet of rice and cook it yourself.

Whenever I can, I’ll meal prep my work lunches. This is a sure fire way to keep my finances in check. The recipe I’m loving at the moment is the Couscous and Veggie Bowl. It uses simple and affordable ingredients and stores so well in airtight containers in the fridge for the week.

The Pad See Ew is my go-to because it tastes just as good as leftovers for lunch as it does for dinner the night before. I love that I can swap out the protein for whatever I feel like that week or to suit what is on special at the supermarket. Prepping easy dishes like this at home always helps me to save some $$$.

DINNER

Don’t diss it till you’ve tried it, the Potato and Green Pea Curry is delish! It uses a ton of spices so it’s packed full of flavour. Peas and potatoes are always affordable veggies plus it makes for great leftovers!

I love the Fried Rice recipe not only because it’s a delicious dish but because I can use frozen veggies which are always kind to the budget plus they speed up the prep time as I don’t need to sit there and chop everything myself.

For me budget friendly recipes are ones which I can cook and then take into the office the next day for lunch (as it means I’m not buying my lunch). At the moment I’m loving the Thai Basil Chicken and Rice. It’s super quick and easy to make and serves 4 so both my husband and I have lunch sorted for the next day.
