We love bringing you brand new recipes every Tuesday and so this week, we thought we’d share one of them here – introducing our Pesto Eggs! We think that this could very well be your new go to breaky.

For many of us, our mornings are often crazy busy – whether it be because you want to sneak in an extra 20 minutes of sleep before work or because you’ve got to get the kids organised, making time for the first and most important meal of the day is often neglected. But, this recipe will help to change that because it’s just too good to miss. Incorporating one of our favourite sauces – PESTO – your eggs are about to be taken to the next level. Just thinking about all the cheesy, oily and green goodness of a pesto sauce is getting us excited.

Ready in under 10 minutes, we think this breakfast recipe (which you could totally enjoy for lunch or even dinner too) will give you the reason to jump out of bed with a spring in your step, especially knowing it doesn’t take long to prepare. Ingredients

2 eggs
2 slices sourdough bread
2tbsp pesto
30g baby spinach

Method

Step 1

Heat a frypan over medium heat. Once hot, spread the pesto in a thin layer. Once the pesto is warm, crack the eggs in and cook for 4-5 minutes, or until the whites set.

Step 2

Toast the bread, then remove eggs from the pan and serve on top of toast with spinach. Season with salt and pepper, then enjoy.
