Laura’s favourite nut free snacks!

I love a good snack. Whether it’s something simple like a piece of fruit or a KIC snack recipe that I’ve made over the weekend for the week ahead, I love having something to snack on between my main meals.

Snacking is actually quite important! When we snack, it helps to keep our energy levels up, our metabolism firing and our brain sharp. That’s why I’m a BIG advocate for snacking!

The KIC app is full of delicious and nutritious snack options. Whether you’re on the hunt for something sweet or savoury, there’s a snack in the recipe hub for you.

Here are my favourite – sweet & savoury – nut free snack recipes!

1. Pesto & Sun-fried Tomato Pinwheels

These puff pastry pinwheels are SO easy to make. With just 5 ingredients, they’re definitely one of the quicker savoury homemade snacks you can make! To keep them nut-free just make sure you check your pesto ingredients (or opt for your own homemade version).

These pinwheels are perfect for a school lunch box, an afternoon snack or even to serve as an appetiser at a gathering. If you’re not a fan of the pesto and sun-dried tomato combo, you can easily change it up! Another combo that I love is a vegemite and cheese puff pastry pinwheel!

You can also easily make these egg-free by using a milk wash instead of an egg wash.

2. Spinach & Feta Muffins

If you’re a fan of spanakopita, you’re going to love these savoury spinach & feta muffins! I also enjoy them as they’re a snack because it helps me to boost my daily veggie intake! From time to time I might even enjoy a few of these savoury muffins for lunch. When I do this, to bulk them up, I’ll slice them in half and sandwich some avocado and tomato in between.

When it comes to storing these savoury muffins, I recommend keeping them in an airtight container in the fridge for 3-4 days or alternatively, you can freeze them for 3-4 months. When you’re looking to defrost them, do so in the fridge then you reheat them in the oven (this will prevent them from going soggy).

3. Holy Grail Hummus

My diet is sometimes a little low in legumes but luckily I LOVE hummus which helps to combat this! I love making KIC’s Holy Grail hummus and pairing it with some crackers or raw veggie sticks as a snack. I’ll also use it in wraps or sandwiches – one of my favourites to use it in is the Pesto and Hummus Veggie Wrap from the KIC app.

I also love the effortlessness of making this homemade hummus. You simply throw everything into a food processor and blend until you’ve reached your desired consistency – it’s as simple as that.

4. Choc Chip Banana Bread

This is a staple recipe in my household. Whether I’m off to a picnic, need to use those overripe bananas sitting on my kitchen bench or want something delicious to tide me over between lunch and dinner – this is my go-to recipe! One tip which I came across and want to share with you is that you can freeze individual slices of your banana bread!

Freezing the slices will not only preserve the flavour and texture of the banana bread for a few months if you can’t finish it in one hit but it also means that you could meal prep this as snacks.

5. Brookies

Are you craving a cookie, or perhaps you’re in the mood for a brownie? What if I told you, you can enjoy both in one hit with our Brookies recipe?!

Using staple pantry ingredients, this Brookies recipe is rich and fudgy and never fails to satisfy my sweet tooth. The Brookies will store perfectly for up to 4 days in an airtight container too which is FAB.

6. Chai Caramel Popcorn Slice

I know it sounds like a random combination of ingredients, but I’m converted – Steph made these for me and I’m in love!

This is also the perfect recipe for anyone who loves those classic Indian chai flavours.

The crunchy, chewy popcorn coated in the rich sweetness of the caramel is a combination dreams are made of. I also love this recipe as it’s no bake! All you need is a stove to make the chai caramel and then it sets in the fridge.
