Laura’s easy, work friendly snacks

Whether I’m working from home or from the office, snacks are an incredibly important part of my day. Snacks help keep my energy levels up, help to sharpen my focus and my hunger at bay. There’s a reason why we were always told to eat ‘brain food’ in primary school!

For too long there has been a negative stigma around snacks, but if you ask me, snacks help us to power through our days and do good for our bodies.

On the days I work from home, snacking is easier as I can wander over to my fridge and pantry and choose something that I feel like in that moment. On the days that I work in the office, snacking is a little tricker and so I need to be a little more organised.

For the days that I’m in the office, whenever I can, I love bringing homemade snacks with me that I’ve baked over the weekend.

Whenever I do this, it not only helps me to save money but allows me to know exactly what is in my snack (which is important with my peanut allergy).

If you’re looking for some homemade snack inspo, here are my top 5 sweet snack recipes you need to try!

1. Choc Chip Blondies

I got SO excited when these Blondies dropped in app. With less than 10 ingredients you’ll have yourself a delicious homemade snack (or even dessert). They come together so easily that even if baking isn’t your strong suit you’ll nail these every time – trust me I am no baker! When making these, you can opt for milk or dark choc chips – whatever you prefer.

2. Strawberry White Chocolate Protein Blondies

If you loved my first snack recipe suggestion, then I think you’re also going to love this one. Not only are strawberry and white chocolate a match made in heaven, but I love that I get a little protein boost from these blondies too! The strawberries add a gentle tartness which is paired beautifully by the sweetness of the white chocolate. Trust me when I saw you’re going to have a hard time picking your preferred blondie recipe!

3. Blueberry and Oat Bars

Oats are high fibre and low GI which makes these bars a seriously great snack choice. When you choose a snack with oats you’re doing wonders for your digestive health and your energy levels. Even better is that they’re ridiculously easy to make. All you need to do is combine all the ingredients (besides the blueberries) and once the mixture has come together you’ll gently mix through the blueberries and pop it into the oven to bake!

4. Rice Crispy Protein Bars

With just seven ingredients, these rice crispy bars are a delicious and protein packed snack! Plus they’re dairy, egg, nut and gluten free! This also makes them a great snack to share with anyone in your office. Even better is that there’s no baking involved, just some time in the fridge for them to set! These are an oh-so-simple but delicious snack.

5. Lemon Blueberry Muffins

These muffins are the perfect combination of sweet and sour and need only nine ingredients! They use almond flour so are also perfect for anyone that’s gluten free. I love enjoying them with my morning or afternoon cup of tea (or coffee)! They never fail to hit the spot.
