Introducing our brand new baked oats recipe which has transformed the cult banana bread into a delicious breakfast. If you’re not a morning person then we think you might become one because this recipe is like have dessert for breakfast – and dessert for breakfast is worth rolling out of bed for.

The sweetness from the banana and maple syrup paired alongside gentle bitterness of the melted dark chocolate is a delectable combo.

One of the best things about this recipe is that you can dictate the consistency. If you prefer a slightly gooier consistency to your baked oats, when you test it with a skewer, you’ll want your skewer to come out a little dirty. On the other hand, if you prefer a more firm and cakey consistency wait until your skewer comes out clean.

P.s. You can easily turn this recipe vegan by removing the egg, swapping in your preferred plant based milk and substituting in your favourite vegan chocolate.

Ingredients

1 cup rolled oats
2 bananas
1 large egg
3/4 cup low fat milk
1tsp baking powder
1tbsp maple syrup
1/4tsp cinnamon
1/4tsp salt
25g 70% dark chocolate

Method

Step 1

Preheat oven to 175C. 

Step 2

Place all ingredients besides the chocolate in a blender and blend on high speed until smooth.

Step 3

Pour batter into a small bowl or ramekin and top with chocolate.

Step 4

Bake for 28-30 minutes, or until a skewer comes out clean.
